Low and slow. Tender chunks of beef in a rich, thick gravy with root vegetables.

Dust beef in seasoned flour. Brown in batches in a hot casserole dish. Set aside.

Soften onions. Add tomato purée, wine and stock. Return the beef. Add herbs.

Cover and cook at 160°C for 1.5 hours. Add carrots and potatoes, cook for another 45 minutes.
