Moist, sweet and the best use for overripe bananas. Even better toasted with butter.
Serves 8
Mash bananas. Mix with melted butter, sugar, egg and vanilla.

Fold in flour, cinnamon and walnuts.

Pour into a lined loaf tin. Bake at 170°C for 50-55 minutes until golden and a skewer comes out clean.

Cool in the tin for 10 minutes, then turn out. Best served warm with butter.
