Sticky Toffee Pudding

Dense, moist date sponge drenched in a buttery toffee sauce. Pure indulgence.

  • 175 g pitted dates, chopped
  • 175 g self-raising flour
  • 150 g dark muscovado sugar
  • 2 eggs
  • 75 g butter, softened
  • 1 tsp vanilla extract
  • 1 tsp bicarbonate of soda
  • 200 ml boiling water
  • 200 g dark brown sugar, for sauce
  • 100 g butter, for sauce
  • 150 ml double cream, for sauce

    Pour boiling water over the dates, add bicarbonate of soda. Leave for 15 minutes.

    Cream butter and sugar. Beat in eggs, vanilla and flour. Fold in the date mixture.

    Pour into a greased baking dish. Bake at 180°C for 35-40 minutes.

    Make the sauce: melt butter, sugar and cream together. Simmer for 5 minutes. Pour over the pudding. Serve with ice cream.
