Three ingredients. Pasta, pecorino and black pepper. The hardest simple dish to master.

Toast cracked peppercorns in a dry pan for 1 minute. Add a ladleful of pasta water and reduce.

Cook pasta until very al dente. Reserve lots of pasta water.

Transfer pasta to the pepper pan off the heat. Add pecorino in stages, tossing vigorously with splashes of pasta water until a creamy sauce forms. Serve immediately.
